The popularity of sweet potatoes is increasing. They have a sweeter taste and a creamier texture. They’re also healthier as they contain vitamins A & C and are full of antioxidants. Sweet potato makes a great alternative to classic potato in most recipes. Join me and let’s make this delicious roasted sweet potatoes with honey and rosemary.

Ingredients
- 4 sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
- 1/4 cup honey
- 2 teaspoons rosemary
- Salt and freshly ground black pepper
Preparation of Roasted Sweet Potatoes
- Preheat oven to 190°C.
- Scrub sweet potatoes before use if leaving the skin on. If not cooking immediately after peeling or cutting, immerse in cold water to prevent discolouration.
- Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, rosemary, salt and pepper over the potatoes.
- Roast for 25 to 30 minutes in oven or until tender.
- Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
Tips for Cooking Sweet Potatoes
Peel or don’t peel the potatoes? The answer depends on personal preference. If you want to get more nutrients, leave the skin on. If you prefer an even texture, remove the skin.
When placing your sweet potato cubes into the baking tray don’t put them too close to each other as they will steam rather than roast. Use two baking sheets if necessary.
While salt and pepper are a classic combo for seasoning, elevate the flavour with a sprinkle of paprika, garlic and cumin.
