Due to it’s popularity, almost every household uses potatoes in their dishes. These beautifully roasted potatoes with rosemary are perfect for all your main dishes. It is easy to make and simply delicious.
The healthiest way to prepare potatoes is to boil them or steam them, however, roasting them is also a good option as well. The key is moderation.
So what are the benefits of eating potatoes?
Well, it’s rich in fibre, iron, zinc, phosphorus, potassium, Vitamin C as well as B-complex. Potatoes also improve digestion.
- 16 medium potatoes
- 5 tbsp duck fat
- 3 sprigs rosemary
STEP 1: Preheat the oven to 190C/gas mark 5.
STEP 2: Cook the potatoes in salted water for 7-8 minutes until almost cooked. Drain thoroughly.
STEP 3: While the potatoes are cooking, put the duck fat into a small roasting tin and heat in the oven for 5 minutes.
STEP 4: When the duck fat is hot, add the drained potatoes, toss well and sprinkle over the rosemary.
STEP 5: Return the tin to the oven and roast for 45 – 60 minutes or until golden or crunchy.
