Serves 8

  • 16 medium potatoes
  • 5 tbsp duck fat
  • 3 sprigs rosemary
  • Salt

Cooking Method

STEP 1: Preheat the oven to 190C/gas mark 5.

STEP 2: Cook the potatoes in salted water for 7-8 minutes until almost cooked. Drain thoroughly.

STEP 3: While the potatoes are cooking, put the duck fat into a small roasting tin and heat in the oven for 5 minutes.

STEP 4: When the duck fat is hot, add the drained potatoes, toss well and sprinkle over the rosemary.

STEP 5: Return the tin to the oven and roast for 45 – 60 minutes or until golden or crunchy.
