You can create this classic, healthy and flavorful side dish very easy. Just use fresh green beans and garlic.

Ingredients
Serves 4 as small side
BLANCHED:
- 250g/ 8oz green beans
- 1 tsp salt
FOR SAUTÉING:
- 1 tbsp extra virgin olive oil (or… butter!)
- 2 garlic cloves , finely minced
- 1/8 tsp salt
- 1 pinch of black pepper

Trim The Fresh Beans
STEP 1: First, line up the beans on your cutting board so the tips are all even. You can either keep them somewhat bunched up or spread them out.
STEP 2: Next, using a chef’s knife or paring knife, cut off the tips with just one slice.
STEP 3: Flip the beans so the tips will be closer to the hand you cut with, and realign them if necessary. Once again, slice the beans in a single motion.
Cooking Method
STEP 1: Blanch beans: Bring a large saucepan of water to a boil with 1 teaspoon of salt. Add the vegetable and cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There’s really no need to shock in ice water). Shake off excess water.
STEP 2: Sauté: Heat oil in a large skillet over medium-high heat. Add beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
STEP 3: Serve: Transfer beans to the serving dish. Serve warm!
Prepare ahead: Blanch beans per step 1, cool and dry, and store in the fridge until required. When ready to serve, just toss with garlic then enjoy!
