Indulge in your finest festive smoked salmon recipe this Christmas season. The omega-3-rich fish makes an ideal starter.

Ingredients for the Smoked Salmon Quiches
Makes 24
- 2 sheets of ready-made shortcrust pastry
- 200g cream cheese
- 5 tbsp cream
- 2 eggs
- 200g smoked salmon, chopped into small pieces
- A small handful of fresh dill, chopped

Cooking Method
STEP 1: Preheat the oven to 200°C/gas mark 6.
STEP 2: Lightly grease 24 mini tart tins or a shallow bun tin.
STEP 3: Roll out the pastry sheets on a lightly floured work surface and cut out 24 shapes to fit the tins. Line the tins with pastry.
STEP 4: Put the cream cheese, cream and eggs in a food processor and mix them together. Season with black pepper.
STEP 5: Put some salmon into each pastry case, then spoon the cream cheese mixture over the top. Bake for 15-20 minutes, or until puffed and golden.
STEP 6: Remove from the tins while warm and top with a little bit of dill before serving.
Serve with a traditional Mulled Wine.
