This delicious recipe is a perfect side dish for a holiday dinner. Brussel Sprouts are very healthy as it is low in calories, high in fibre and contains vitamins (vitamin K, C, B6, potassium, magnesium, iron, thiamine and phosphorus) as well as minerals. And what is the best part of this recipe? You can make it quickly (less than 30 minutes) and the result is tasty brussels sprouts which are golden and crisp on the outside and tender on the inside.

Ingredients
- 1kg Brussels sprouts, outer leaves removed
- Sea salt and freshly ground black pepper
- 1–2 tsp olive oil
- 3 cloves garlic peeled & sliced
Preparation

Clean the sprouts and remove any loose leaves. Then trim stems by cutting off the tough ends. Halve the larger Brussels sprouts so they are cooked evenly with the smaller ones. Cut a cross symbol through the stem which is the toughest part of the Brussels sprout. The cross will allow them to cook at the same rate as the tender area.
Cooking Method
STEP 1: Bring a pan of salted water to a boil. Add the sprouts and blanch for 2–3 minutes, then drain well.
STEP 2: Preheat the oven to 400°F/200°C.
STEP 3: Place the Brussels sprouts in an oven-safe dish, then add the garlic, salt, and pepper, followed by the olive oil. Toss to coat.
STEP 4: Roast in the oven uncovered for 20-25 minutes until crisp, brown and caramelized on the outside and tender on the inside.
