A real holiday cookie made from linzer dough and filled with poppy seeds as well as walnuts. It is delicious and a very popular dessert at Christmas in Hungary.

Ingredients
- 300 g of all purpose flour
- 180 g of butter
- 90 g of powdered sugar
- 3 tablespoons of lemon juice
- 1 egg yolk
- a pinch of salt
- zest of a lemon
Walnut Filling
- 100 g of ground walnuts
- 2 tablespoons of powdered sugar
- 1 egg white (slightly whisked)
- 1 teaspoon of rum
- 1 teaspoon of apricot jam
- 1 packet of vanilla sugar (9 g)
- 1/3 teaspoon of cinnamon
- zest of a half an orange
Poppy Seeds Filling
- 100 g of ground poppy seeds
- 2 tablespoons of powdered sugar
- 1 heaping tablespoon of apricot jam
- 2 tablespoons of milk
- 1 packet of vanilla sugar
- zest of a half a lemon
For the rolling
powdered sugar mixed with vanilla sugar (1 packet 9 g)
Baking method

STEP 1: Crumble the soft, but not melted butter with the flour, then add salt, sugar, egg yolk, lemon juice and lemon zest. Knead the ingredients into a dough, cover with plastic wrap and place it in the fridge for at least 60 minutes.
STEP 2: Combine the filling ingredients. You need to get a thick paste.
NOTE
If for some reason the mixture is too runny you can correct it by adding some breadcrumbs.
STEP 3: On a well-floured surface roll out the dough into a rectangular shape, approximately 3-4 mm thick. Then cut it into 4 parts, approximately 3 inches (7-8 cm) wide. From each part, cut out approximately 1.5 inches (4 cm) pieces from the roll and place them in a lined baking pan, the folded sides facing down.
This type of dough is very soft, so you need to be careful with the rolling. If the dough breaks, just pinch it together with your fingers.
STEP 4: Add a generous amount of poppy seed filling on each piece of dough ¾ inch wide alongside one edge, and carefully roll up the dough and pinch the edges together.
STEP 5: Bake it in a preheated 360F oven for approximately 15-18 minutes. Once the top looks firm, the cookies are ready. The color of the top still needs to stay pale. If the cookies’ bottom is golden, then they are ready.
STEP 6: Don’t touch the cookies after baking until they cool down completely, wait until the dough hardens. Roll them in powdered sugar mixed with vanilla sugar.
You can make this dessert ahead as it is good for a week in an airtight container.
